Ingredients:
1. Lemon Rice
- 1 ½ cups uncooked rice
- 3 tablespoons lemon juice (or lime juice as needed, 1 medium lemon)
- ½ teaspoon salt (adjust to taste)
- 2 tablespoons olive oil
2. Fresh Salad
- 2 large ripe tomatoes, roughly chopped
- ½ cucumber, deseeded and roughly chopped
- 100g (3½oz) feta cheese, drained and cut into cubes
- ½ teaspoon dried oregano
- 2 teaspoons extra virgin olive oil
- Salt as per taste
3. Broiled Shrimp
- 1 pound large shrimp (deveined, tail on or off)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- ¼ teaspoon onion powder
- ½ teaspoon kosher salt
Instructions:
Lemon Rice
Cook the Rice: Wash and soak 1 ½ cups of rice in a bowl for at least 15 minutes. Drain the rice and transfer it to the cooking pot. Add lemon juice and some lemon slices, olive oil, salt and pepper.
Fresh Salad
Preparing the salad: Wash and cut all ingredients into cubes, add all spices but the salt.
Broiled Shrimp
Spicing up the shrimp: In a large bowl add shrimp and all powder spices. Mix it well, and then slowly add olive oil and mix again. And leave it on the side while the rice is cooking.
Baking: Preheat the oven to the high broil. Spread the shrimp on a baking sheet like on the picture to the left. Add shrimp to the oven and bake for 5-8 minutes.
Serving:
On a plate add 1/2 cup of lemon rice, 1/2 cup of fresh salad, and a 1/4-1/2 cup of shrimp.
