Savor the Simplicity: Garlicy Shrimp and Tomato Pasta

This easy and quick refreshing summer pasta with shrimps is my go-to for those after work days dinner.

Ingredients

  • 300g Shrimps 
  • 2 Garlic cloves
  • 1 medium tomato
  • Olive oil
  • Parsley
  • Salt and Pepper to taste 
  • 1 pack of gluten-free spaghetti 

Instructions

  1. Cook the Spaghetti:

    • Bring a large pot of salted water to a boil.
    • Add the gluten-free spaghetti and cook according to the package instructions until al dente.
    • Drain the spaghetti and set aside.
  2. Prepare the Shrimp:

    • In a large skillet, heat a generous drizzle of olive oil over medium heat.
    • Add the minced garlic and sauté until fragrant, about 1 minute.
    • Add the shrimps to the skillet and cook until they turn pink and opaque, about 2-3 minutes per side.
    • Season with salt and pepper to taste.
  3. Make the Sauce:

    • Add the diced tomato to the skillet with the shrimp.
    • Cook for another 2-3 minutes until the tomato softens and releases its juices.
    • Stir in a handful of chopped parsley.
  4. Combine and Serve:

    • Add the cooked spaghetti to the skillet and toss everything together until well combined.
    • Drizzle with a bit more olive oil if needed and adjust the seasoning with salt and pepper.
    • Garnish with additional parsley for a fresh touch.
  5. Enjoy:

    • Serve the shrimp spaghetti hot, and enjoy your delicious, gluten-free meal!
